You are scalding the tea, it makes it slightly more bitter than it should be.

It’s even worse if you do it with green tea

Although at the office I’m drinking rooibos with the tea bag left in the cup.

That’s acceptable

80-85°C is the correct water temperature. Get a kettle that can do that temperature for you. It’s life changing

No. You’re supposed to drink it. The teabag and its contents can go to the plants.

I suspect the tannins.

We used the rooibos in tropical fish tanks to keep fish happy and healthy

Apart from the milk and boiling the water this is exactly how I do it as well.

Or if I can’t even be bothered to wait for the kettle I use the Tefal quick cup thingy.
